Morocco - Tidzi - Amina Hammoush, 40, roasts the Argan fruit in her kitchen.
The argan oil is extracted by local women in the same traditional way that was passed on by their ancestors. After collecting the fallen fruits from the trees, women crush their nuts in order to extract the kernels, which are then passed through a millstone and grinded. The oil is extracted by adding water and pressing the resulting mash. It takes around 30 kilos of fruits to make one liter of argan.
